Tonya’s Trader Joe Chicken Chili
My friend Tonya gave me this recipe. I like it becaue it makes a REALLY yummy meal, perfect for company, perfect for camping, perfect for anytime, and you can find all the ingredients at Trader Joe’s. I usually use my own chicken stock instead of the boxed stuff. The soup is delicious with the Just Chicken from Trader Joe’s, and I feel the yummy taste and convenience is worth the splurge.
This is a very forgiving recipe. Feel free to add more or less of ingredients, use different kinds of beans, any kind of salsa you favor, etc.
2 cans black beans
2 cans pinto beans
1 can corn
1 can tomato sauce
1 jar of salsa (12-16 oz)
1 box of chicken stock (or homemade)
Water, as desired
1 bag of Just Chicken grilled chicken breast strips (frozen section of TJ’s) (you could just slice 2 of your own grilled chicken breasts )
2 zucchinis, cut up
2-3 cloves of garlic (I put in a heaping tablespoon of minced garlic from a jar)
1 tblsp cumin
2 tsps chili powder
2 handfuls of spinach
Put all ingredients except spinach in pot. Add as much water as desired. Bring to a boil. Simmer for 30 – 90 minutes. During last 15 minutes of serving, add spinach leaves.
Serve with cheese, sour cream, sliced avocado and tortilla chips. YUM!
