I've used a couple/three peeled and chopped Romas, but then you'll need more chicken stock or water. Forget the granulated chicken stock and stay with homemade or a high quality concentrate like Minor's Recipe looks interesting, but I’d add:

1/4 tsp of cumin

1 carrot chopped

1 chile de arbol (discard after cooking)

Maybe a little too heavy with tomatoes for me. I’ve used a couple/three peeled and chopped Romas, but then you’ll need more chicken stock or water.
