Robin’s Potato Soup

I got this recipe from my sister-in-law, who got it from her friend Robin.  It is out of this world YUM.

The original recipe said to use flour, and I just did cornstarch instead.  I am thinking about giving potato starch try, now that I have a freezer bag full of it thanks to me gluten-free lifestyle :)

1 large red onion (other onions work fine as well, but it was terrific with a red onion)

1.5 cups ham

1 cup diced celery

3 cups minced potatoes

1 cup butter (I use less)

3 tablespoons sea salt

3 tablespoons cornstarch

6 cups of milk (I do a combination of whole milk and half n’ half, depending upon what we have available)

Saute first 5 ingredients for 20 minutes.  Remove from heat.  Add cornstarch (mixed in a bit of cold water first), salt, pepper to taste.

Reheat and serve.  Yummy.  Seriously yummy.
